The secret to our fruit spread is getting the amount of fruit just right. And finding the perfect sweetener. Our goal was to create a spread that would have less than 5% sugar. So you can treat yourself to our Fruit Jam as often as you like. And we did it! We use xylitol as sweetener. It occurs naturally in small amounts in fruits like strawberries and plums. Xylitol has the best properties for a fruit jam in terms of texture and taste, and it has fewer calories than regular white sugar.
Our apricot Fruit Jam contains 57% fruit, while the raspberry and strawberry ones contain 64%. Apricots have a naturally higher sugar content than strawberries or raspberries. Since we wanted the final product to contain less than 5% sugar, we put a bit less fruit in the apricot jam. But this doesn’t mean it's less tasty! Apricots have a super intense flavor all on their own.
Because normal jams have a lot of sugar, their shelf life is very long, even after they've been opened. There’s no added sugars in our jam, only naturally occurring fruit sugars. Which means it’s more susceptible to things like mold. So once you’ve opened the jar, please store it in the fridge. As long as you always use clean spoons or knives to dig in, our Fruit Jam will stay fresh for 2-3 weeks.
Fruit spreads require a special acidity level (pH value) for the pectin, which gives the jam its consistency and smooth mouthfeel. We use citric acid for the acid and calcium citrate to stabilize the pH. It's not harmful to the body, only a technical helper for the product.
