As much corn salad as you like | |
200 g | sweet potatoes |
1 tsp | Organic Coconut Oil by foodspring |
For the dressing: | |
1 tbsp | olive oil |
1 tbsp | balsamic vinegar |
1 pinch of | salt |
1 pinch of | pepper |
Optional: | |
1/2 | avocado |
Preparing the salad with sweet potato
- Peel the sweet potato and cut it into small pieces. Fry with coconut oil for about 10 minutes in a pan. Season the sweet potato with salt and pepper.
- Wash your salad and put it into a bowl. Wash the tomatoes, cut into pieces and add them to the salad.
- Stir your dressing and mix it into the salad.
- Arrange your salad on a plate, lay the sweet potato pieces on top and enjoy!

Tip:
Try this salad with some fried courgette or with pumpkin in the autumn. Add some avocado if you want to eat more healthy fats.
